Calrose Rice Pudding ( dessert )

450g Milk

100g PaddyKing calrose rice (soaked 30 min) 50g Sugar 1 Tsp Orange zest 1 Tsp Lemon zest 1 Tsp Orange concentrated .sunquick 1 Tsp Lemon juice 1 1/2 Tbsp Rum 1 pc Cinnamon stick 1/2 tsp Ground nutmeg 1 Tsp Vanilla essence 1 Tbsp Butter 1/2 Tsp Salt


Garnish – roasted walnut, almond nut & strawberry Method

Add milk, rice, lemon and orange zest and juice, rum, cinnamon, nutmeg, and salt to a medium pot and slowly bring to a boil. Stir constantly to avoid the rice sticking to the bottom of the pan. After bringing to a slow boil, reduce to low-medium heat and slowly simmer while stirring occasionally until the rice is nearly cooked (about 20 minutes). Now add the sugar, vanilla and butter and simmer another 5-10 minutes while stirring occasionally.


Let the pudding cool slightly and serve in small dishes (this dessert is very rich) or chill in the refrigerator for a couple hours for a dish that is more like a firm pudding. Enjoy with recommended garnishes.
