200g Red Cargo Rice } soaked in water for 30 minutes and drained
100g Sushi Rice
1nos Garlic, Sliced
1pc Duck liver Chinese Sausage , Diced
2 pcs Chinese Black Mushrooms, Soaked and Sliced
50g Carrot , Diced
½ no White Onion, Diced
12g Ginger, Chopped
100 g Spinach Leaves , Chopped
100 g Sweet Corn Kernel
Salt and pepper to taste
4 slices Cheddar cheese sliced
2 tbsp oyster sauce
1 tsp sesame oil
½ tsp pepper
½ tsp salt
Garnish with coriander leaves and spring onion
Heat up a wok with 1 tbsp of cooking oil and fry the duck liver sausage till fragrant. Add the onion, garlic, carrot, mushrooms, ginger, sweet corn kernel and fry for 1 min.
Add both rice and tossed well. Add oyster sauce, salt, pepper and mixed well.
Transfer the rice mixture into the rice cooker ,add water and spinach leaves. Cook the rice using a brown rice mode .
When rice is cooked ,add sesame oil and let it rest in the rice cooker for 20 minutes .
To dish out – place the fragrant red cargo rice mixture in a desire mould and place a sliced of cheddar cheese on top. Use a blow torch to melt the cheese or simply let it melt by itself as the rice is still hot . Garnish with Coriander and spring onion.
